Description

Cerbero White Label is an Old Ale defined by its extended barrel maturation, delivering a noticeable medium sourness instead of the usual malt sweetness. Spending two years in former wine barrels introduces clear tart notes of balsamic vinegar and red fruit.

The original malty tones provide some weight but stay in the background, allowing the acidity to lead. Extended wood contact also brings out specific notes of leather, leaving a sharp, dry finish.

Ca' del Brado operates out of Pianoro, in the Bologna province of Italy, as a brewing cellar focused on slow fermentations and aging. If you usually reach for classic dark beers with heavy roasted flavors, keep in mind that this one goes in a distinctly sour direction.
