FAQ Lambic

What is Lambic beer?
Lambic is an extremely old and complex craft beer style originating from Belgium. This beer is made through spontaneous fermentation, meaning the brewer lets natural wild yeasts in the air do the work in wooden barrels. A Lambic beer has a unique character, being sour, dry, and very different from any other standard beer. It is a natural product that requires great patience and knowledge to create.
What does Lambic taste like?
Lambic beer has a sour, sometimes earthy or hay-like taste, with an acidity that makes your mouth water. It is a beer that has almost no foam and is not bitter at all. An artisanal Lambic beer can be very complex, featuring hints of balsamic vinegar or fruit, depending on how long it has been aged in wooden barrels.
Difference between Lambic and sour beer?
The major difference between Lambic and modern sour beer lies in the fermentation method and complexity. Lambic uses exclusively wild microorganisms from the surrounding environment, while modern sours often use controlled cultures. In addition, Lambic requires years of aging in wooden barrels to develop its specific character. This traditional method creates flavors you cannot replicate through rapid techniques.
What types of Lambic exist?
There are several variations, the most popular being simple Lambic, Gueuze, and fruit variants. Gueuze is a blend of young and old Lambic, bringing a perfect balance between acidity and carbonation. Fruit versions, such as Kriek (cherries) or Framboise (raspberries), add an extra layer of complexity. All keep that sour and rustic base specific to the Belgian style.
Alcohol level in Lambic?
Lambic beer usually has a moderate alcohol level, between 5% and 7%. This drink isn't about alcohol power, but about its subtlety and natural acidity. The alcohol level allows acidity to be the main element defining the tasting experience. It is a beer consumed in moderation, to appreciate its chemical complexity.
How to choose a good Lambic?
Choosing a good Lambic involves looking for established Belgian artisanal producers. Check the bottling date, as good Gueuze can be aged in the bottle for a long time. Look for labels that specify traditional methods, to be sure you aren't buying an industrial product. Choose fruit versions if you prefer something more accessible for your first try.
Food pairing for Lambic?
This style pairs excellently with aged cheeses with intense flavors, which balance the acidity of the beer. Also, seafood and light dishes with greens can be a very good companion for a Lambic. Its acidity can cleanse the palate after fattier dishes, offering a refined balance. It is an ideal beer for long meals with gourmand friends.
Is it recommended for beginners?
Lambic can be a quite challenging style for those used only to industrial pale beer. The sour taste and lack of foam can seem strange at first for someone unaccustomed to craft beers. However, if you like cider or dry wine, you have a high chance of appreciating this style. We recommend starting with a fruit variant to make the transition easier.
How to serve Lambic?
Lambic is usually served at cellar temperature, somewhere between 10 and 12 degrees. You don't need a special very cold glass, because the higher temperature helps the aromas unfold. Pour carefully into the glass, avoiding shaking the sediments that may remain in the bottle. Savor it slowly, in small portions, to observe how the taste changes as it warms up.
