Description

Cirkusbajer is a Smoothie Sour built around a massive addition of tropical fruit and a vibrant purple color. The flavor profile leans heavily into these additions, bringing forward notes of dragon fruit, pink guava, passion fruit, and a softer peach background.

To build the thick body expected from this style, the recipe relies on fruit purees and ice cream powder infused with yuzu. This combination cuts down the sharp acidity usually found in sour beers, pushing the final result closer to a dense fruit drink. Red beet juice is also in the mix, further deepening the overall color.

Hop Hooligans is a craft brewery from Bucharest, Romania. As one of the breweries with the widest reach on the craft scene, they focus heavily on powerful, unconventional recipes. Cirkusbajer was brewed in collaboration with Stepping Stone, a Danish microbrewery dedicated to creating new starts for refugees.
